1 tablespoon sugar
1 teaspoon mirin (If you can't get/find mirin, dry sherry works too)
1 teaspoon soy sauce
salt (dash, also optional if you're watching sodium)
The proper way to make it is with a tamago *pan*, but I don't own one. (Note to self: fix this sometime). I use a nonstick omelette pan. The dashi, which is fish stock, is optional. Food process or beat the ingredients together until smooth. Thinly coat the bottom of the pan with oil or melted butter. Heat the oiled pan until hot, but not smoking. Pour the egg mix into the pan. When the egg looks opaque and not runny and you can get a spatula underit, flip the omelet. Or if you're good at flipping omelets without a spatula, wing it! If you're not that savvy, the mix makes a good scrambled egg too. :D Cool to room temperature and chill. Cut into strips for sushi or other use, provided it has managed to last that long. Or something like that.

Those birds have been scoping out the place since the berries started to form...it's kind of funny, actually. We put a row cover on the bulk of the plants, but not all of them. I'm willing to let nature have some. Just not all. :)
